Pulled Chicken Burrito Bowl
Ingredients
- 1 pound chicken breasts
- 3 cups Essential Everyday chicken broth
- 1 cup Essential Everyday honey barbecue sauce
- 1 12oz bag Essential Everyday riced cauliflower, prepared
- 2 cups Essential Everyday mild cheddar cheese (shredded)
- 1 cup Essential Everyday thick & chunky salsa
- Sliced avocado (optional)
- Cherry tomatoes (optional)
- Fresh jalapeño (optional)
- Essential Everyday tortilla strips (optional)
Directions
In a medium sized pot add the chicken breasts and chicken broth and bring to a boil over high heat. Reduce heat to low, cover, and cook for 10-12 minutes, until the chicken is cooked through.
Transfer the cooked chicken breasts to a medium sized bowl and shred using forks. Add the barbecue sauce and mix to combine.
Place 3/4 cup of prepared riced cauliflower into a serving bowl. Top with 1/4 of the shredded chicken mixture, 1/2 cup cheese, 1/4 cup salsa, along with other optional garnishes.
PREP TIME 5 minutes
COOK TIME 15 minutes
SERVES 3-4
