Pomegranate Salmon
Ingredients
- 4 Dierbergs Atlantic Salmon Portions
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- ½ cup pomegranate juice
- ¼ cup Essential Everyday Chicken Stock
- ¼ cup red wine
- 2 cloves garlic, minced
- 2 tablespoons Essential Everyday Unsalted Butter
- Pomegranate seeds, for serving
- Italian parsley, for serving
- Dierbergs Kitchen Fresh & Crisp Seasoned Green Beans
Directions
Pat salmon portions dry. Season with salt and black pepper.
Heat olive oil in a large skillet over medium heat. Add salmon, flesh side down, and cook for 4 minutes. Flip salmon and cook for an additional 4 minutes.
Remove salmon from pan and set aside.
Add pomegranate juice, Essential Everyday Chicken Stock, and red wine. Deglaze pan and bring to a simmer. Simmer for 10 minutes, until thickened.
Add garlic and simmer for 2 minutes, until fragrant. Add butter and stir.
Spoon sauce over salmon fillets. Top with pomegranate seeds and Italian parsley. Serve with Dierbergs Kitchen Fresh & Crisp Seasoned Green Beans.
