Grilled Watermelon Salad with Arugula and Goat Cheese

Ingredients

  • 1 local watermelon
  • 1 bag baby arugula
  • 1 red onion, sliced thin
  • 1 cup goat cheese crumbles
  • Drizzle balsamic glaze
  • Vegetable oil as needed

Directions

Peel and cut the watermelon into 1½ inch thick planks. Lightly oil the watermelon and place on the hot spot of the grill. Allow to cook creating charred grill marks.

 

Remove the melon from the grill and cut into smaller pieces.

 

Place baby arugula and sliced onions on a platter or plate and top with the grilled watermelon. Sprinkle with crumbled goat cheese and drizzle with balsamic glaze.
