- ½ cup water
- ½ cup Dierbergs sugar
- 6 slices peeled Homegrown cucumber
- 2 sprigs fresh mint
- 6 large blackberries
- 2 tablespoons Cucumber Mint Simple Syrup
- 2 ounces gin
- Club soda, chilled
FOR SYRUP: In small saucepan, combine water, sugar, cucumber, and mint over medium-high heat; cook stirring constantly until sugar dissolves. Bring to a boil; reduce heat and simmer without stirring 1 minute. Remove from heat; cool to room temperature. Strain syrup; remove and discard solids. Store in airtight container in refrigerator up to 2 weeks.
FOR SPRITZER: In cocktail shaker, combine blackberries, Syrup, and gin; muddle by pressing a muddler or wooden spoon down with a twisting action. Fill shaker halfway with ice; shake vigorously until chilled. Strain into ice-filled tall water glass. Top with club soda. Garnish with additional blackberries, if desired.
