What Is a Hatch Chile?

Roasted Hatch Chiles add a totally unique blend of smoky, sweet and buttery flavor to any dish. But be warned – they’re deliciously addictive. Because Hatch season happens within such a short window, hatch fanatics will buy in bulk, roasted immediately, and then freeze for use throughout the year.

What Makes Hatch Chiles So Special?

Like champagne, Hatch Chiles are named after the region they are grown in, and only peppers in the Mesilla Valley are considered Hatch Chiles. Long hot days and cool nights are the perfect climate for growing chiles, but the season is short, so these peppers are only available a few weeks each year!

What's the Best Way to Hatch?
