During processing, chicken must be cooled. Most poultry producers chill with cold water baths treated with an antimicrobial, even for organic chicken. That water absorbs into your meat—and you pay by weight! Bell & Evans uses 100% Air Chill during processing, eliminating unwanted water pickup.
