Pork Tenderloin with Chipotle Glazed Apples


1 package (16 ounces) applewood smoked bacon
1 pork tenderloin (1 to 1½ pounds)
¼ cup firmly packed Dierbergs brown sugar
1 teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon coarse salt
½ teaspoon coarse ground black pepper
Chipotle Glazed Apples (recipe link below)


Place bacon in single layer on shallow foil-lined roasting pan. Bake in 375°F. oven until partially cooked, but still pliable, about 10 to 12 minutes. Place bacon on paper towel-lined plate; let cool 5 minutes. Reserve roasting pan.

Remove fat and silverskin from tenderloin. In small bowl, combine brown sugar and seasonings; sprinkle over meat. Wrap bacon slices around meat, tucking ends under other bacon slices. Place tenderloin in reserved baking pan. Bake in 375°F. oven until internal temperature is 150°F., about 25 to 35 minutes. Let stand 5 minutes before slicing. Serve with Chipotle Glazed Apples.


Use regular sliced bacon NOT thick sliced bacon. Amount of bacon needed will depend on whether you have two smaller tenderloins or one larger tenderloin.
