Fast and Fabulous Fajitas


1 pound ground beef or turkey
2 cups slivered onions
2 cups frozen bell pepper strips, OR 1 red or green bell pepper, cut into thin strips
1 tablespoon Old Bay or Chesapeake Bay Style Seafood Seasoning
1/2 teaspoon garlic powder
Warm flour tortillas

Avocado Salsa
Prepared picante sauce
Shredded cheddar cheese
Sour cream
Shredded lettuce
Fresh Tomato Salsa


In medium skillet over medium-high heat, cook ground beef until browned, about 4 minutes. Drain and discard excess fat. Stir in onions, bell peppers, seasoning, and garlic powder. Cook, stirring occasionally, until onions are tender, about 4 minutes. Spoon meat mixture into warm tortillas. Place a variety of toppings in bowls, and let each person add toppings as desired. Makes 4-6 servings


To sliver onions, cut into thin wedges from stem to root. TO WARM FLOUR TORTILLAS: Place stack of flour tortillas on microwave-safe plate. Cover with damp paper towel. Microwave on high for 1 to 1 1/2 minutes. EAT HEARTY TIP: Use diet lean ground beef or lean ground turkey. Top fajitas with Fresh Tomato Salsa, shredded lettuce, picante sauce, and small amounts of low fat cheese, and fat free sour cream.
