Bow Ties and Tomato Salad


8 ounces bow ties pasta
4 ounces cheddar cheese, cut into ½ inch cubes
2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes, or 1 (28 ounce) can Red Gold® Petite Diced Tomatoes, drained and rinsed
2 medium zucchini, sliced into bite-size pieces ¼-inch thick
½ cup Italian vinaigrette dressing
1 tablespoon chopped fresh oregano, or 1 teaspoon dried oregano
1 tablespoon chopped fresh basil, or 1 teaspoon dried basil
6 lettuce leaves


Cook pasta according to the package directions. Rinse in cold water and drain well. Combine pasta, cheese, petite diced tomatoes and zucchini in a large bowl.

In a small bowl combine dressing, oregano and basil. Add to salad and toss to coat. Cover and refrigerate at least 30 minutes to blend flavors. Serve on lettuce leaves.
