Flank is one of the most flavorful steaks, and this spice rub gives it a wonderful kick.1 beef flank or sirloin steak, 3/4 inch thick (about 1 1/4 pounds)
1 1/2 teaspoons Dierbergs brown sugar
1 1/2 teaspoons Hungarian sweet paprika
1/2 teaspoon cracked black pepper
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
1/2 teaspoon dry mustard
1/2 teaspoon coarse salt
Pub Sauce (recipe follows) Trim and discard fat from steak. In small bowl, combine remaining ingredients except Sauce. Rub over both sides of steak; let stand at room temperature 20 to 30 minutes. Place steak on grid over medium-high heat; cover and grill until internal temperature is 145°F. for medium, about 5 minutes per side. Cover and let stand 5 minutes before thinly slicing across the grain.
Makes 4 servings
Pub Sauce In 2-cup glass measure, combine 1/4 cup stout beer, 1/4 cup honey, and 1/4 cup steak sauce (A-1). Microwave (high) until slightly thickened and reduced to 1/2 cup, about 5 minutes. Serve with steak.
