These tasty bars are sure to become a new fall favorite!
Ingredients
1 package (18 ounces) refrigerated ready-to-bake sugar cookie dough
1 package (10 ounces) cinnamon-flavored baking chips
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1 teaspoon vanilla extract
1 cup solid pack pumpkin
1 teaspoon pumpkin pie spice
3 eggs
Directions
Arrange 15 of the cookie dough pieces in greased 9 x 13-inch baking pan; pat out to cover bottom of pan. (Reserve remaining dough for another use.) Sprinkle chips over dough. Bake in 350˚F. oven until crust is lightly browned, about 12 to 14 minutes. In large bowl, beat together cream cheese, sugar, and vanilla until smooth. Add pumpkin and spice; beat at low speed until blended. Beat in eggs. Pour batter over crust. Bake until center is set, about 30 to 35 minutes. Cool in pan on wire rack to room temperature. Chill for several hours before cutting into squares to serve.
