Calzones are a traditional Italian meal in a pocket perfect for a casual supper at home or a meal on-the-run.
1 envelope (1/4 ounce) active dry yeast
1/4 teaspoon sugar
1 cup warm (100˚ to 110˚F.) water
3 cups flour
1 teaspoon salt
1 teaspoon dried basil
2 tablespoons olive oil
6 tablespoons pizza sauce
1 package (8 ounces) shredded Italian cheese blend
1 package (3 to 3.5 ounces) sliced pepperoni
Dissolve yeast and sugar in warm water; let stand until bubbly. Combine flour, salt, and basil in food processor fitted with steel knife blade. Add oil to yeast mixture. With processor running, pour yeast mixture through feed tube. Process until dough forms ball; process 30 seconds. Let stand 15 minutes. Divide dough into 6 portions; shape each into 6-inch circle. Spread 1 tablespoon sauce on each, leaving 1-inch border; top with cheese and pepperoni. Fold dough in half; pinch edges to seal. Cut several slits in tops of calzones. Place on parchment-lined baking sheet; let rise 15 minutes. Bake in 450˚F. oven until golden brown, about 12 to 15 minutes. If desired, brush tops of calzones with olive oil.
