Overnight Blueberry French Toast
This make-ahead recipe is terrific for a special family celebration!
1 loaf (8 ounces) French baguette, cut into 1-inch slices
2 cups milk
1/2 cup firmly packed brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
2 cups fresh or frozen blueberries
1/4 cup butter or margarine
1/4 cup firmly packed brown sugar
Arrange bread in greased 9 x 13-inch baking dish. In large bowl, whisk together eggs, milk, the ½ cup brown sugar, vanilla, and cinnamon. Pour mixture evenly over bread; turn slices as needed to coat completely. Cover and refrigerate overnight. Just before baking, sprinkle berries over bread. Heat butter with the 1/4 cup brown sugar in small saucepan over medium heat until bubbly. Drizzle over berries. Bake in 375˚F. oven until set, about 25 to 30 minutes. If desired, dust with powdered sugar.
