Napa Slaw with Ginger Vinaigrette  View Video
The sweet and salty vinaigrette and crunchy peanuts finish off this great slaw that's deliciously different.1/4 cup rice or white wine vinegar
3 tablespoons honey
2 tablespoons vegetable oil
1 tablespoon reduced-sodium soy sauce
1 tablespoon minced fresh ginger root
6 cups finely shredded napa cabbage,(about 2 pounds)
1 cup freshly shredded carrot
1 bunch radishes, shredded
4 green onions, thinly sliced
1/2 cup Dierbergs dry roasted peanuts, coarsely chopped In 1-cup glass measure, stir together vinegar, honey, oil, soy sauce, and ginger until well mixed; let stand at least 15 minutes. In large bowl, combine napa cabbage, carrot, radishes, and green onions. Drizzle vinaigrette and sprinkle peanuts over slaw; toss until well mixed. Serve immediately.
