Make-Ahead Corned Beef

When it's St. Paddy's Day, everyone's Irish! So how about serving some traditional Irish food. Corned beef is a must! Ours is delicious with its sweet mustard sauce, and best of all, it can be made ahead.
2 1/2 to 3 1/2 pounds corned beef brisket
1/3 cup honey
3 tablespoons dijon-style mustard
Place corned beef in large pot; add water to cover. Cover and bring to a boil over high heat; reduce heat and simmer for 2 1/2 to 3 1/2 hours or until brisket is tender. Remove brisket from water. Trim and discard excess fat. Slice meat diagonally across the grain into thin slices. Place in shallow baking dish. In small bowl, combine honey and mustard. Pour over top of meat. Cover and refrigerate overnight. Place covered corned beef in cold oven. Turn oven on to 350°F. and bake for 25 minutes. Remove cover and bake an additional 10 minutes until heated through.
