Short on time? Try this delicious, quick entrée!
1 salmon fillet (1 to 1 1/2 pounds)
1 teaspoon grated lime peel
1 tablespoon lime juice
1 tablespoon honey
Coarse salt and freshly ground black pepper to taste
Cut salmon into 4 to 6 equal portions, cutting to, but not through, skin. Place salmon, skin-side down, on foil-lined baking pan. Broil 4 to 6 inches from heat source until opaque throughout, about 10 minutes. In small bowl, stir together lime peel, juice, and honey; spoon over cooked fish. Season with salt and pepper. Broil until fish is golden and glazed, 1 to 2 minutes. (Allow 10 minutes total cooking time per inch of thickness.)
