Holiday Mashed Potato Bake
Everyone will ask for seconds of this holiday side dish.
5 pounds russet potatoes, peeled, quartered, and cooked
1 cup (8 ounces) dairy sour cream
1 cup milk
Salt and pepper to taste
1 jar (8.5 ounces) julienne cut sun-dried tomatoes, drained
1/4 cup snipped fresh chives
In large bowl, mash potatoes with sour cream, milk, salt, and pepper. Stir in sun-dried tomatoes and chives. Spoon into 9 x 13-inch baking dish that has been coated with no-stick cooking spray. Bake in 350˚F. oven until heated through, about 35 minutes.
Makes 10-12 servings
MAKE-AHEAD TIP Spoon potato mixture into baking dish; cover and refrigerate. To serve, bake covered casserole in 350 F. oven for 45 minutes. Remove cover; bake until heated through, about 15 minutes.
EAT HEARTY TIP Use reduced fat milk and sour cream.
