The creamy avacado sauce is delicious with this spicy chicken.
1 clove garlic, peeled
1 avocado, halved, seeded, and peeled
1 carton (6 ounces) fat-free plain Greek yogurt
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1 pound chicken tenders
Wooden skewers, soaked in water for 30 minutes
2 teaspoons Greek seasoning
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Fit food processor with steel knife blade. With machine running, drop garlic through feed tube; process until finely chopped. Add avocado, yogurt, lemon juice, and salt; process until smooth. Place in serving bowl; cover and chill several hours or overnight to develop flavors. Remove tendons from chicken, if desired. Weave 1 chicken tender onto each skewer. In small bowl, combine Greek seasoning, garlic powder, and onion powder. Sprinkle over both sides of chicken. Place skewers on oiled grid over medium-high heat; cover and grill until cooked through and browned, about 4 to 5 minutes per side. Serve with avocado sauce.
