You'll love this colorful fruit salad with a touch of the tropics!2 cups fresh pineapple cubes
2 kiwi, peeled and sliced
8 large strawberries, sliced
1 cup fresh blueberries
1 can (11 ounces) mandarin oranges, drained
1 teaspoon grated lime peel
1/2 cup sweetened flaked coconut (optional)
1 cup dairy sour cream
1/4 cup firmly packed brown sugar
1 tablespoon dark rum (optional)
In large bowl, combine pineapple, kiwi, strawberries, blueberries, oranges, and lime peel; gently stir to mix. Place coconut in glass pie plate. Microwave (high) for 1 to 1 1/2 minutes, stirring every 30 seconds, until golden brown. In small bowl, stir together sour cream, brown sugar, and rum until sugar dissolves. Serve dressing alongside fruit. Sprinkle coconut over fruit.
