Whether you're planning a picnic or an elegant summer dinner, this make-ahead salad is always a great addition to the menu.
1 pound asparagus, trimmed and cut into bite-sized pieces
1 yellow bell pepper, quartered, seeded, and thinly sliced
1 red bell pepper, quartered, seeded, and thinly sliced
2 cups grape or cherry tomatoes, halved
1 tablespoon fresh thyme leaves
1 teaspoon grated lemon peel
2 tablespoons fresh lemon juice
2 teaspoons Dierbergs brown sugar
1 teaspoon coarse salt
1 teaspoon Dijon mustard
Freshly ground black pepper
3 tablespoons Dierbergs extra virgin olive oil
Place asparagus in large microwave-safe bowl. Microwave (high) for 2 minutes or until just crisp-tender. Add peppers and tomatoes to asparagus. In small bowl, whisk together remaining ingredients. Drizzle over salad; toss until well mixed. Cover and chill for several hours to develop flavors.
