Fresh, crisp apples make this cake a wonderful taste of fall anytime.
1 cup flour
2/3 cup granulated sugar
1/2 cup butter, softened
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla extract
3 cups chopped apples
1 cup chopped pecans
Powdered sugar
In large mixer bowl, combine flour, granulated sugar, butter, baking soda, cinnamon, and salt. Beat with electric mixer at low speed until fine crumbs form, about 3 minutes. Add eggs and vanilla; beat at medium speed until well combined. Fold in apples and nuts. Spread into 8-inch square baking pan that has been coated with no-stick cooking spray. Bake in 350˚F. oven until wooden pick inserted in center comes out clean, about 35 to 40 minutes. Cool in pan on wire rack. Dust with powdered sugar.
