1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup Dierbergs butter, softened
1/4 cup solid vegetable shortening
1/2 cup Dierbergs granulated sugar
1/2 cup firmly packed Dierbergs brown sugar
1 large Dierbergs egg
1/2 teaspoon vanilla extract
1 1/4 cups rolled oats
1/2 cup peeled, cored, and diced apple (Ambrosia, Golden Delicious)
1/2 cup mini chocolate chips
1/2 cup sweetened dried cranberries In medium bowl, combine flour, baking powder, baking soda, and salt; set aside.
In large mixer bowl, beat butter, shortening, and sugars at medium speed until light and fluffy. Add egg and vanilla; beat at low speed until combined. Add flour mixture; beat at low speed until just combined. Stir in oats, apple, chocolate chips, and dried cranberries until well combined.
Drop dough 1 rounded tablespoon at a time onto parchment-lined baking sheets, about 3 inches apart. Bake in 350°F. oven until golden brown and center is firm but moist, about 8 to 10 minutes. Cool on baking sheets 2 minutes. Cool completely on wire racks.
