Zucchini Pizza Sticks


1½ cups Italian-seasoned panko bread crumbs
½ cup grated parmesan cheese
½ cup egg substitute
1½ pounds zucchini (about 3 medium), cut into 3 x ½-inch sticks
Olive oil no-stick cooking spray
1½ cups pizza sauce, warmed


In shallow dish, combine panko and parmesan. Place egg substitute in second shallow dish.

Dip several zucchini sticks in egg substitute; coat with panko mixture.

Place zucchini in single layer on foil-lined baking sheet. Repeat procedure to coat all zucchini.

Lightly coat zucchini with cooking spray.

Bake in 475°F. oven 7 minutes.

Remove baking sheet from oven and turn zucchini over; coat with cooking spray.

Bake until golden brown and tender, about 7 minutes. Serve hot with pizza sauce.
