Watermelon Salsa


2 cups small diced watermelon
1 cup small diced cucumber
2 tablespoons minced red onion
2 tablespoons sliced green onion
1 tablespoon minced jalapeno
2 tablespoons minced mint
2 tablespoons lime juice
1 tablespoon sesame oil
1 tablespoon soy sauce


In a medium bowl toss all ingredients together. Serve immediately or allow to refrigerate for up to 12 hours to develop flavors. Serve with tortilla chips or grilled/roasted shellfish, fish, or pork.
