Pineapple and Jicama Slaw


2 tablespoons honey
2 tablespoons fresh lime juice
1 tablespoon Dierbergs olive oil
1 package (14 ounces) shredded 3-color cole slaw mix
1 container (10 ounces) Dierbergs Fresh Cut sliced jicama, diced (about 2 cups)
2 cups diced fresh pineapple
1 jalapeño, halved, seeded, deveined, and finely diced
¼ cup diced red onion
2 tablespoons chopped fresh cilantro


In large bowl, stir together honey, lime juice, and olive oil until well mixed. Stir in slaw mix, jicama, pineapple, jalapeño, red onion, and cilantro until well mixed. Cover and let stand 15 minutes to develop flavors.
