GRILLED PEACHES WITH RASPBERRY BUTTER

Ingredients

¼ cup Dierbergs butter, softened
2 tablespoons Dierbergs brown sugar
¼ cup seedless raspberry jam
Pinch coarse salt
4 large ripe homegrown peaches, halved and pitted
2 teaspoons Dierbergs canola oil
Dierbergs vanilla ice cream
1 cup crushed almond biscotti
1 container (6 ounces) fresh raspberries

Directions

1. In small bowl with hand mixer, beat butter and brown sugar at medium speed until lightly and fluffy.

2. Beat in jam and salt until well mixed; set aside.

3. Lightly brush cut side of peaches with canola oil.

4. Place peaches cut-side down on oiled grid over medium heat; cover and grill until grill marks appear, about 2 to 3 minutes.

5. Turn peaches cut-side up. Place small dollop of raspberry butter in center of each peach; cover and grill until butter is melted, about 2 minutes.

6. Place on individual serving plates. Serve warm with scoop of vanilla ice cream, topped with crushed biscotti, and raspberries.
