Creamy Scrambled Eggs with Chipotle Crab Hollandaise Sauce


12 large eggs
1 teaspoon salt
½ teaspoon ground white pepper
2 tablespoons Dierbergs butter
4 ounces (½ of 8-ounce package) Dierbergs cream cheese, cubed and softened
2 tablespoons snipped fresh chives
6 English muffins, split and toasted, OR 6 frozen puff pastry shells, baked according to package directions

In large bowl, beat eggs with salt and pepper. In large skillet, melt butter over medium heat. Add eggs; cook stirring occasionally until almost set, about 2 minutes. Add cream cheese and chives; cook and stir until cheese melts and eggs are softly set, about 2 minutes. Divide eggs evenly among English muffins. Top with Chipotle Crab Hollandaise Sauce.
