Cheesy Corn Frittata


2 tablespoons Dierbergs Pure Olive Oil
Corn Kernels removed form 3 ears of corn
½ cup Dierbergs Fresh Cut sliced Green Onions
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon fresh ground pepper
8 eggs, whisked
1 cup Dierbergs Shredded Mild Cheddar Cheese
½ cup Dierbergs Shredded Monterey Jack Cheese


Preheat oven to 450°F.

Heat an oven proof skillet over medium heat and olive oil. Add corn, green onions, and garlic; cook mixture for 5 minutes. Add eggs to vegetable mixture and season with salt and pepper. Top with cheese. Place skillet in oven and cook for 15 minutes or till eggs are set.
