Melons and Cukes


2 cups cubed watermelon
1 medium cucumber, peeled, halved, seeded, and chopped
1 tablespoon chopped cilantro leaves
1 tablespoon chopped mint leaves
1 tablespoon Dierbergs extra virgin olive oil
1 tablespoon fresh lime juice
2 teaspoons white balsamic vinegar
¼ teaspoon coarse salt
Pinch ground coriander (optional)
Freshly ground black pepper


In large bowl, combine melon and cucumber; sprinkle cilantro and mint over top. In 1-cup container with tight-fitting lid, combine remaining ingredients. Shake until well blended. Drizzle dressing over melon mixture; gently toss until well mixed. Serve immediately.
